Raisin Cupcakes

Ingredients:

Raisins - 1 cup
Orange Juice - 1/3 cup
Flour - 2 cups
Baking powder - 2 teaspoons
Cinnamon powder - 1/4 teaspoon
Butter - 1/2 cup
Sugar - 1 cup
Eggs - 3 Large
Vanilla - 1 teaspoon
Milk - 3/4 cup

Method:

  • PreHeat oven to 325 degrees.
  • grease 16 muffin cups.
  • In a pan, mix raisins and orange juice over medium heat until it simmers. remove from heat.
  • In a bowl sift together flour, baking powder and cinnamon.
  • Beat together butter and sugar until light and fluffy.
  • Add eggs and vanilla, beat well.
  • Alternately, stir flour mixture and milk into butter mixture, beginning and ending with flour mixture.
  • Drain raisins and discard the soaking liquid and stir raisins into batter.
  • spoon batter into prepared muffin pan, filling three-quarters full.
  • bake cupcakes 20 mins, or until lightly browned, and cupcakes test done.
  • Transfer to a rack to cool.
